This is the Cajun Chicken Salad I prepared for brunchinner (I do plan on eating again later today but when one fixes their first meal of the day at 3pm, I feel like it deserves an entirely new hybrid name).
It’s comprised of: romaine lettuce, sweet corn, green beans, sliced onions, walnut halves and Cajun seasoned chicken (cooked chicken thigh meat, shredded and heavily seasoned with some magic fairy dust then sauteed in a pan with a tiny bit of oil) all dressed with a lemon juice/Dijon mustard/white wine vinegar/olive oil vinaigrette.
YUM.
I also ate a nice lil’ banana beforehand because potassium is what’s up.
P.S. The fact that there is a romaine lettuce heart stump in the middle of this picture is driving me crazy. That is because I am, in fact, crazy.
